One-Bowl Oatmeal Breakfast Cookies


One-Bowl Oatmeal Breakfast Cookies

(Makes Approx. 14 Cookies)

1 cup gluten-free rolled oats
1/2 cup @moxienosh trail mix butter (or sub with nut/seed butter of choice)
1/3 cup toasted coconut flakes
1/3 cup almond flour
1/4 cup unsweetened cacao chips (I love @paschachocolate, or you can use any chocolate chips of choice...unsweetened or not)
2 ripe bananas, mashed
1/2 tsp sea salt
1/2 tsp cinnamon
1/2 tsp baking soda
3 Tbs pumpkin seeds
1 tsp vanilla 
2 medjool dates, chopped


  1. Preheat oven to 350 degrees F.

  2. Mash bananas in a large bowl, then add all remaining ingredients and mix together until well combined.

  3. Add in 1/4 cup chopped nuts and 1 Tbs brewers yeast for lactation support if you are breastfeeding (I’ve made both ways and they turn out great with or without these additions).

  4. Scoop about 2 Tbs of batter onto a parchment lined tray and form into a cookie.

  5. Bake for 15 minutes then remove from oven and let cool.
