Smashed Chickpea Salad

I have a slight, err, major obsession with chickpeas. I eat them constantly! Whether it's in the form of hummus, roasted in the oven with some spices, or in this delicious Smashed Chickpea Salad. 

This salad is one of my favorites. It's great on it's own, stuffed in a pita, over some greens, or on a sandwich with lettuce, tomato and avocado. It's perfect for a quick and easy meal or snack, and is loaded with protein, fiber and iron from all the yummy chickpeas.

Smashed Chickpea Salad

(Makes 2 Servings)

Ingredients:
1 15 oz. BPA-free can chickpeas (garbanzo beans)
1/4 cup hummus
1-2 Tbs stoneground mustard
1/2 Tbs apple cider vinegar
juice of 1/2 lemon*
sea salt and pepper, to taste
dash of garlic powder, cayenne pepper, cumin & turmeric

*You can also substitute the lemon juice by doing a full tablespoon of apple cider vinegar instead of 1/2, if you are on a neutropenic diet and feel uncomfortable using fresh lemon juice. 

Instructions:

1. Rinse and drain chickpeas and place in a medium size bowl. Mash up chickpeas with a fork and combine remaining ingredients. Store leftovers covered in the fridge.
