This soup has been on repeat all week long and I don’t hate it one bit! I got super lucky because I just sort of went for it without a recipe and it turned out sooo good that it might just be my fave soup yet! See recipe below...
1 (15oz) bpa-free can of cannellini beans or chickpeas
1 yellow onion, chopped
5 cloves garlic, minced
2 stalks celery, finely chopped
3 carrots, sliced into thin rounds + halved
1 small head broccoli, cut into small florets
1 medium head cauliflower, cut into small florets
2 yukon gold potatoes, cut into small cubes
4 cups veggie broth
1 small can unsweetened coconut cream
1/3 cup nutritional yeast (plus 1-2 Tbs more to taste)
1.5 tsp herbamere
black pepper, to taste
1/4-1/2 tsp cumin
1/4 tsp turmeric
Drizzle unrefined oil in pot and sauté garlic, onion and celery over medium heat until fragrant. Next add remaining veggies and cook for a few more minutes. Then add spices and liquids. Bring to a boil, then reduce to simmer and cover. Cook for about 20-25 minutes or until potatoes are fork tender. Mix in half the amount of cannellini beans and use an immersion blender to blend half of soup. Then add remaining beans and stir to combine. Let sit uncovered for just a couple more minutes. Taste and adjust seasonings, then top with fresh parsley and raw pumpkin seeds or cashews! 💛 #nutritiouslynatalie
Starting Valentine’s Day off right with this chocolate strawberry smoothie 🍓 whether you “celebrate” today with a special someone or not, remember how special YOU are and that self-love needs to come first before you can truly love or care for another. So don’t forget to #treatyoself to a little bit of whatever makes you happy today! Like this smoothie perhaps..
1 cup unsweetened almond milk
a few frozen strawberries
1/2 of one banana or sub with 1/2 cup frozen, riced cauliflower
a handful of greens
2 Tbs hemp seeds
1-2 Tbs raw cacao powder
a spoonful of peanut butter + a dash of cinnamon
topped with a spoonful of @coyo_organic probiotic yogurt, cacao nibs, and more cinnamon! ❤️ #nutritiouslynatalie
My @sobbacycle fuel this am 💪🏻 I think the hardest thing about being pregnant in the middle of winter is staying motivated about working out. Most days you can find me walking up and down my stairs a bunch of times, or doing a prenatal yoga video in my bedroom, but by far my favorite exercise during this pregnancy has been taking spin classes. And I am vowing to stay motivated and take at least one class a week before baby makes his or her arrival! This pre-workout bowl was a combo of frozen berries, banana, @coyo_organic probiotic yogurt, hemp + flaxseed, almond butter, and one of my super squares that I made a batch of yesterday and totally forgot how much I LOVE (recipe can be found on the blog)! I am also trying to eat lots of dates (which is the only sweetener and one of the main ingredients in these squares) over the next four weeks leading up to my due date because they are said to help ease labor. Sooo give me all the dates. #nutritiouslynatalie
Thank you to all of the AMAZING women in my life (near and far) that showered me and #babyarcher with so much love, and to my family for throwing me the most beautiful, unforgettable baby shower @dancingspiritranch ❤️👶🏼 #onemonthtogo #nutritiouslynatalie
Feeding those EBTB cravings (thanks to @mrs_yackity_yack 😘) one sprouted grain vegan cream cheese english muffin at a time. #nutritiouslynatalie
Thinking back to this cozy morning spent at our @airbnb in Joshua Tree this past December. One whole grain toast with crunchy peanut butter, and one with mashed avo, sea salt + a squeeze of lemon! Nothing better than traveling but still being able to whip up your own eats! #nutritiouslynatalie
Nothing better than some homemade granola, fresh berries, and @gtskombucha cocoyo to get the week started off right 👌🏻 especially after all the Super Bowl snacks consumed yesterday 😏 happy Monday friends! #nutritiouslynatalie
Anyone else begin to crave breakfast before they go to bed? 🙋🏼‍♀️ so proud of myself for remembering to soak some oats last night (because it’s a miracle if I remember to do anything these days #pregnancybrain), which helps to make them more easily digestible and much much creamier, resulting in a delicious breakfast that satisfies all cravings. I topped my bowl of (soaked!) gluten-free steel cut oats with banana, hemp seeds, unsweetened cacao chips, pure date syrup, and my new fave Trail Mix Butter from @moxienosh made from a blend of almonds, peanuts, sunflower seeds, flax + chia, dried cherries, and sea salt 👌🏻
